When your summer garden starts to come in it is nice to have a few easy recipes to use up your harvest.
This simple sauteed summer garden veggie recipe is the perfect simple side dishes for those busy summer days.
How to make sauteed summer veggies
Sauteeing summer vegetables is one of the easiest ways to create a delicious and healthy meal. With a few tips you can create this perfect simple summer side dish.
Supplies needed
Cutting board
Sharp knife
Two bowls for separating vegetables
Vegetable brush
Sauteed summer veggies ingredients
Two small yellow squash
Two small or one large zucchini squash
One medium size onion
Two bell pepper either red, orange or yellow
2 tablespoons olive oil
Salt and Pepper to taste
Everything but the bagel seasoning
1 tablespoon Thyme
Garlic salt to taste
Step One
Using your vegetable brush be sure to wash off your squash because you will be leaving the skins on for this recipe.
After washing and drying your veggies cut off the ends of each one.
Then cut them in half to make it easier for cutting into thick chunks.
Cut all the veggies into 2 inch chunks for cooking.
Preheat your pan and drizzle with olive oil.
Coat your veggies with salt and pepper, thyme, garlic salt and Everything but the basil seasoning.
Step two
Once the oil is heated you can begin by adding your onions and peppers to the pan, cooking until tender, approximately 5-7 minutes, stirring frequently.
Once tender you can add in the zucchini and yellow squash and cook until translucent.
When cooking the squash, if you would like it to brown a bit do not stir it too much while cooking to allow for
browning.

Ingredients
- Two small yellow squash
- Two small or one large zucchini squash
- One medium size onion
- Two bell pepper either red, orange or yellow
- 2 tablespoons olive oil
- Salt and Pepper to taste
- Everything but the bagel seasoning
- 1 tablespoon Thyme
- Garlic salt to taste
Instructions
1. Wash your squash and peppers with a vegetable brush
2. Cut your squash in half length-wise
3. Cut your halves into 2 inch chunks
4. Preheat your pan
5. Drizzle with olive oil
6. Coat your veggies with salt and pepper, thyme, garlic salt and Everything but the bagel season to taste
7. Cook your onions first until tender approx. 5-7 minutes
8. Add in squash and peppers and cook until squash is translucent
Notes
Leave lid off during sauteeing to keep from getting soggy.
If you like to brown your veggies a bit do not stir often in order for the browning to occur.
Ideas for serving this side dish
This is a simple side dish by themselves or served over rice, even in pasta.
There are so many ways to enjoy your summer garden veggies, this just happens to be one of my favorites.
Tips
Some varieties of squash cook quicker than others so be sure to add to the pan accordingly.
When sauteeing your veggies be sure not to put the lid on as this will cause the veggies to steam and they may become soggy.
Also you can add any variety of vegetables based on your preference and what you are growing in your garden this summer.
If your not growing a garden you can use whatever is available at our local farmers market.
