How to make a quick and simple fall soup
Now that is officially fall it is time to get back to making comfort foods. Today I am sharing how to make a simple fall soup.
Tis the season of comfort foods and I am here for it. Today I wanted to share one of my favorite quick and simple fall soup.
This quick and simple veggie hamburger soup is the perfect, uncomplicated week night dinner.
Soups in the cooler months is also a great way to use up any vegetables that you may have put in the freezer during the summer months.

Ingredients
- 1 lb lean hamburger
- 2 small cans tomato soup
- half an onion sliced
- 6 small red potatoes chopped
- 1/2 bag of sliced carrots
- 1 small bag frozen corn
- 1 small bag frozen green beans
- minced garlic to taste
- fresh basil
- salt and pepper to taste
- 4 cups water
Directions for quick and simple soup
- saute your sliced onion in olive oil just until onion are fragrant
- cook ground beef until done
- put in cut up potatos
- add sliced carrots
- minced garlic and salt and pepper to taste
- 4 cups of water
- bring to a boil, then turn down to simmer for 1.5 hours
- at this point add in your frozen corn and green beans cooking another thirty minutes
For this recipe you can use fresh, frozen or canned vegetables.
When I made this I used a combination of fresh and frozen vegetables, but it can also be made with a large can of veg-all.
Another option for this recipe is to use your favorite vegetables.
If you are using fresh, it will depend on what is in season in your area.
Veggie hamburger soup
A simple fall soup
Ingredients
- 1 lb. lean hamburger, cooked
- half of large onion sliced
- 2 cans of tomato soup
- 1 small bag frozen corn
- 1 small bag frozen green beans
- 6 small red potatoes chopped
- half bag of fresh carrot slices
- 3 cups of water
- minced garlic to taste
- seal salt and pepper to taste
- fresh basil
Instructions
- saute your onions in olive oil
- brown hamburger
- add both cans of tomato soup
- add in potatoes and carrots
- add garlic, salt and pepper
- add 3 cups of water
- bring to a boil then simmer for 1.5 hours
- then add in your frozen vegetables
Notes
If your soup is too thick add in more water as needed.
If you need to make this quicker you can use a large can of veg-all in place of fresh veggies and have it ready quicker with no real prep time
