Once the cucumbers start coming in, it can be hard to keep up with the supply.

Traditional canning is not something I have ever tried and I prefer a quicker method.

Best Refrigerator Pickles

yields 4 quart jars

6 cups then sliced cucumbers

2 cups thing sliced onions

1 1/2 cups sugar

1 1/2 cups white vinegar

1/2 teaspoon celery seed

1/2 teaspoon salt

1/2 teaspoon turmeric

Combine all ingredients in a pot and bring to a boil.

Pour over the cucumbers and onions while still hot.

Store in the refrigerator

Note: double the liquid for the 4 quarts, we find it works better with more juice
